Zoolbia-Bamieh: Zoolbia are deep-fried funnel cakes, soaked in a light saffron syrup of rose water. Bamieh, okra in Persian, is reminiscent of churros and dips in the same syrup. The combination is especially popular during the month of Ramadan, providing a much needed sugar rush after a day of fasting. These fried decay pillows are best washed down with a warm glass of freshly brewed Persian tea.
Rangina: Date palms are especially abundant along the Persian Gulf and the warmer southern regions of Iran, making ranginak a rich and flavorful dessert typical of the south. Soft and chewy dates are stuffed with toasted nuts and then drenched in a mixture of toasted flour, butter, cinnamon and cardamom, and finally topped with chopped pistachios. The colors and textures make this dessert a treat for the eyes and taste buds.
Faloodeh Shirazi: Noodles as a dessert? After trying faloodeh, you wonder why you did it without it. These semi-frozen spaghetti vermicelli are dipped in a rosewater syrup and then served with lime juice and \/ or sour cherry syrup. Visit any ice cream shop throughout Iran and you’ll find faloodeh to cool off, especially during the hot summer months. No wonder, then, that the most famous and delicious version comes from Shiraz.
Bastani Akbar Mashti: In the 1950s, Akbar Mashti became famous for his bastani, and today the best known and most traditional ice cream in Iran still bears his name. This saffron vanilla ice cream blend with rose water and pistachios will make your mouth happy, but not as happy as the delicious chunks of frozen cream in the mix. Try it in a cup or, like a local, between two wafers. You can also opt for a makhloot, half fake half ice cream, to get the best of both worlds.
Sholezard: This rice pudding is made with just the right note of saffron to give it the perfect shade of yellow. Words and drawings are then sprinkled with cinnamon, allowing children and adults to show their creativity and the almond flakes give it the final finishing touch. A typical dessert during religious ceremonies and the month of Ramadan, sholezard is produced in large quantities at home and distributed to friends, relatives and the needy as nazri, a charitable offering.
