Traditional Nordic dishes
The most popular Iranian dishes in northern Iran, including a range of delicious flavors and aromas, welcome tourists and travelers alike. Often garlic is the main ingredient. In addition, local vegetables, eggs, nuts and pomegranate paste form the basis of Nordic cuisine. It is difficult to choose one or two samples of Nordic dishes to present. Because each dish from this area has a unique and specific taste. But sour barbecue (Kebabe Torsh) and sour chicken (Morghe Torsh) may be many tourists’ favorite dishes. The tart flavor that pomegranate paste gives to meat or chicken keeps this in mind. Alongside these barbecues, we can mention Anarbig, a kind of Nordic sauce, based on pomegranate and nut paste, Shirin Tareh based on spinach and garlic, Chakhratmeh, Naskhatoon, Lunghi, Vavishka, all based on liver or red meat and tomatoes, and finally Torsh Shami, Khuli Aash and many other dishes.The city of Rasht has a rich and varied cuisine in the northern part of Iran, and on the UNESCO network of creative cities it has been registered in the list of creative cities of gastronomy. Persian cuisine is definitely not vegetarian, and most of the dishes you will find on restaurant menus are meat-based, from dozens of varieties of kebabs to dizi. However, as in any country, the restaurant proposals do not do justice to the richness of Iranian cuisine. Especially in the green provinces of northern Iran, in fact, such as Gilan, there is no shortage of delicious options for an abundant vegetarian menu. One of these is the delicious aubergine stew mirza ghasemi covered with scrambled eggs. Such a delicacy could only have illustrious origins. The mirza ghasemi, in fact, was invented by Mohammad Ghasem Khan, former governor of the city of Rasht, capital of Gilan, and Iranian ambassador to Russia during the cagiara dynasty. Mohammad Ghasem Khan was an excellent cook and created this dish when he was on duty in St. Petersburg and then exported it to his native Gilan in 1860 where it quickly became very popular.
